Roasted Spiced Almonds

(Originally published in Chatelaine Magazine, January 2003.)

These treats pack a spicy punch, and while it may not set off more than 1 or 2 alarms, they can present a challenge for wine tasting.  We prepared these nuts specifically for our barrel-aged red Icewine, Buona Notte.  The nut-spices accent and enhance similar qualities found in the wine, while sweetness tempers the heat.

Ingredients:

2 tbsp liquid honey
2 tbsp vegetable oil
2 tbsp granulated sugar
1 tsp cayenne pepper
1 tsp paprika
1 tsp salt
1/2 tsp allspice
3 cups whole almonds, skin on


Instructions:

1. Preheat oven to 350F.  Generously grease a large baking sheet with shallow sides.

2. In a large bowl, stir honey with oil, sugar, cayenne pepper, paprika & salt; mix well. Add nuts to mixture. Using a wooden spoon, mix until evenly coated.

3. Spread nuts in single layer on baking sheet. Roast uncovered
for approximately 15-17 minutes, stirring frequently until nuts are toasted & glazed.

4. Remove from oven & let cook, stirring occasionally to prevent sticking.

5. Place nuts in bowl and serve. Nuts will keep well in airtight container, in a cool place, for up to 4 days.
