Introducing our prosecco-style rosé. This wine will have you wishing summer never ends! Made using the Charmat method, a blend of our estate Vidal Blanc and Cabernet Sauvignon was carbonated in a pressurized tank. Additional yeast and sugar was added for a secondary fermentation in this pressure tank followed by an additional few months of lees aging. Astra Rosé was bottling leaving 22g/L of residual sugar. Light, fresh and vibrant with notes of strawberry candy and spring flowers. A pleasant mousse gives the wine a lift and balances the slight sweetness. Pair with Eggs Benedict, strawberry and spinach salads, or cheese and charcuterie boards! 96% Vidal and 4% Cabernet Sauvignon.

- [2020 Salvatore's Reserve Merlot](https://www.riverviewcellars.com/shop/shop-canada/red-wines/2020-salvatores-reserve-merlot/) - Our first ever reserve vintage of Merlot! 2020's fantastic growing season paved the way to unprecedented longevity and complexity out of the wines from our estate vineyard. This Merlot was hand-picked at the peak of ripeness, a short fermentation on whole clusters for a few days was followed by a gentle de-stemming and crushing into small fermentation tanks. After an extended maceration on the crushed skins and seeds (2 weeks), the wine was gently pressed into 4 small 225L neutral French Oak barrels and left to age for a total of 24 months. A wine of this unique quality cannot be rushed. The wine was bottled on October 30th, 2022, giving approximately 100 cases only. Cherry compote and vanilla jump out of the glass followed by a mild fruitcake-like spice. Merlot's round and plush mouthfeel is exaggerated with this vintage, with an opulence that is rare to find in Niagara. This wine is very approachable in its youth, but will age gracefully for the next 5-10 years. Riverview’s Reserve Series identifies our top wines from premium growing seasons.
